FAT-FREE, delicious, melt-in-your mouth! Few things in life are worth dying for. This fantastic dessert is meant for living!

Crust Ingredients

1 1/2 cups of finely crushed low fat vanilla wafer crumbs

1/4 cup of no-calorie refrigerated butter spray (you may add a bit more or less to get a workable crust as temperature, humidity & altitude affect differently)

You can also opt to use a ready-made crust of your choice but be sure and count this calorie content as part of your recipe.

If you use a ready-made crust, subtract 65 calories to delete the given crust, then add the calories of your ready-made crust and divide by 8 (8 servings).

1 envelope of unflavored gelatin

1/2 cup freshly squeezed lemon

3(8 oz) packages of fat-free cream cheese, softened

Sugar Substitutes - add as much or as little as you like - you control the sweetness.

2 cups of fat-free topping

Optional - again, experiment with different flavorings & additives.

Dissolve gelatin in lemon juice on low heat. Blend cream cheese and sugar substitute, gradually adding gelatin mixture until well blended. Gently fold in topping & pour into crust.

Chill until set. Enjoy.

Serves 8 quite generously. You can top with additional topping after cheesecake sets, but be sure and count those extra calories.

CALORIES = about 150 per slice.
