If you're like the average family, you'll soon have a lot of leftover turkey. Leftover turkey for Turkey Hash, Turkey Sandwiches, Turkey Jerky - the list is endless! But be sure to save some turkey for this delicious diet version of Horn of Plenty Soup. As a note, dark meat may be a tab more calories than white, but it actually makes the best soups. Note the same about chicken-n-dumplings. Have you ever noticed that the dumplings made with dark meat (specifically the legs) are much tastier than if made from the breast? Now on to our delicious, warm and hearty, diet wise recipe! Diet Horn of Plenty Soup Ingredients 2 cups of chopped turkey - white & dark meat Generously spray a deep pot with cooking spray and when warm, add the chopped onions, bell pepper, celery and mushrooms. Cook until onions are clear. Add 4 cups of water, the carrots and the wild rice. If you opt to use macaroni rather than wild rice, wait to add with the potatoes. Toss in the rosemary. Cook until carrots are almost done, then carefully drop in the potatoes and the bay leaf. Cook until potatoes are done. Add broth and bullion; carefully stir until well incorporated. Carefully add tomatoes. Remove the bay leaf just before serving. Be certain to remove the leaf, because if ingested, the thin stem in the leaf can become lodged in the throat and that just totally destroys Holiday Happiness. Serve the Horn of Plenty Soup with a wedge of cornbread that's been prepared with diet-wise ingredients (skim milk, half of the required oil using no calorie butter spray for the other half, etc.). Brush your warm cornbread with no calorie, refrigerated butter spray. Enjoy a tall glass of skim milk with your meal because studies indicate that three glass of milk per day are effective in weight loss and in weight maintenance. It's always interesting that we have all this leftover turkey, but no leftover Pumpkin Pies, isn't it?
