To make this low fat recipe, you'll need:

1 package of dessert sponge cakes (4 cakes)

1- 8 ounce package of light cream cheese + 3 Tablespoons milk

1/2 cup of any of the following mix:  red raisins, golden raisins, dried chopped dates, chopped walnuts, dried cranberries, dried chopped apricots, chopped pecans, dried peaches, dried pineapple - or any other dried fruits or nuts of your choice.

light whipped topping + 4-6 packets of Equal sweetener

Cream the cheese with the milk; add sweetener. Add 1/2 cup of the fruit and nut mix. Split each dessert cake into 2 pieces so that they can sit on top of one another.  Next, add 1/4 of the cream cheese mixture to one of the split cake halves. Add 1 Tablespoon of the whipped topping, then add other cake layer and additional topping.

Sprinkle the top with some of the dried fruit and nut mixture.  Assemble the other three cakes in same fashion. Makes 4 servings at about 200 calories each.
