Diet Recipe for Reindeer Cookies

Our low calorie holiday cookie recipe.


Although these aren't the healthiest cookiesin the world, they come close to being the cutest.

They are made with rice cakes, a bit of white melted chocolate and pretzels - so they do contain some diet-friendly ingredients.

Diet Reindeer Cookies, a Low Calorie Cookie Recipe

The Recipe Ingredients

1 bag of mini pretzels
melted white chocolate

1 bag of mini rice cakes, your favorite flavor

handful of chocolate chips

handful of red hots

Dip one side of the rice cake in the chocolate and lay flat on waxed paper (or foil). Press a pretzel at the top on each side of the rice cake so that it sinks into the chocolate. These are the reindeer's antlers.

When cool, add two chocolate chips for the eyes and one red hot for the nose.

Kids love these little reindeer and the plus is that they will keep nicely in a sealed container for several days.

Holiday Banana Rum Cake Recipe for Dieters

Let's make a delicious banana rum cake to set on the holiday table of treats, shall we? We'll want it to be low in caloric values - therefore we'll play with the recommended oil content. Aha - that's where the ripened bananas come into the recipe. They will assist quite nicely in this area.

And we'll skip the frosting, and what better cake to do such with than the rum cake - as it's so moist and delicious that is really doesn't need that arctic blast of sugar grams.


The Recipe Ingredients

1 yellow cake mix, the variety with pudding in the mix
3 large eggs or if you are watching your cholesterol consumption, you can use egg substitute
1 cup of mashed, ripened banana
1 Tablespoon of Rum Extract
1/3 cup of English Walnuts, chopped
1/4 cup of light or dark brown sugar
Water: Use the recommended amount on the package.

Preheat your oven to 350 degrees and prepare a tube or bundt pan for the Banana Rum Cake. Either treat with non-stick cooking spray or use the flour/vegetable shortening method to prevent sticking.

As the oven preheats, pour the dry cake mix into a deep bowl. Add the three large eggs, the mashed banana, the Rum Extract, the recommended amount of water and the brown sugar. Mix for about two minutes - or until the batter is smooth in consistency.

Carefully stir in the English Walnuts.

Transfer the batter to the bundt or tube pan. Place into the oven and bake for about 45 minutes. The rum cake is done when a toothpick is inserted and it comes out clean of batter and is free of goo.

Remove and allow to cool for about 10 minutes, then invert onto a serving plate that has a lid that will allow you to seal the leftovers.

You can also fill the center with holiday treats if you wish. Top each serving with reduced fat whipped topping or light whipped cream in a spray can. It's so good!
