Low Fat, Low Calorie Party Appetizers, Punch & Munchies For Your New Year'DIET NEW YEAR'S RIPPING PARTY PUNCHBOWL CAKE: Rip up 1 large anglefood cake. Mix up 2 large boxes of fat-free, sugarfree instant vanilla pudding using skim milk to prepare. In a large bowl OR punchbowl, layer the cake, the pudding, LIGHT whipped topping, fresh fruit and fresh nuts (almonds/pecans/walnuts/filberts/cashews - all work well). Top with a thin layer of the topping and sprinkle with colored sugar stars.

You can change up the vanilla flavor by adding any of these extracts to the prepared pudding: 1 Tablespoon of RUM extract, 1 Tablespoon of Banana extract or 1 Tablespoon of Almond extract.

OR, use 1 chocolate sponge cake, chocolate pudding flavor, fresh strawberries and a few walnuts. Alternate with the whipped topping.  Note: Butterscotch, Pistachio or Lemon pudding also works well.

Low Fat, Low Calorie Party Appetizers, Punch & Munchies For Your New Year'DIET BANANA PIE IN THE SKY: Crush up 1/2 box of lowfat vanilla wafers. Add 1/2 cup of no calorie butter spray that's been brought to room temperature and press into a pie plate using waxed paper to mash it all in.

 

 

Next, mix up 1 large box of fat-free, sugarfree instant vanilla pudding using skim milk to prepare. Layer the pudding, and sliced ripe bananas in the pie plate. Top with LIGHT whipped topping and sprinkle top of pie with just a TINY BIT of nutmeg as a garnish.

Low Fat, Low Calorie Party Appetizers, Punch & Munchies For Your New Year'KIWI LIME DIET PIE: Prepare as you would the Diet Banana Pie in the Sky pie, substituting the bananas with ripened crushed kiwi that have been sweetened with a bit of SPLENDA or Equal. Add the juice of one lime plus 2 drops of green food coloring to the instant pudding.  Add crushed kiwi to pudding, then pour into pie shell.  Top with LIGHT whipped topping and garnish with thinly sliced, slightly twisted lime OR grated lime.

Low Fat, Low Calorie Party Appetizers, Punch & Munchies For Your New Year'PARTY FRUIT PINEAPPLE & COCONUT BOATS: Slice up an assortment of fruit such as pitted cherries, kiwi, bananas, peaches, apples, oranges (without the peel), pineapple and seeded grapes. Coat with a mixture of the following: juice of 1 lemon, juice of 1 lime, several packets of SPLENDA or Equal, whipped into 8 ounces of LIGHT cream cheese until loose. Keep adding juices if necessary.  Pineapple juice also works well, but make certain that it is unsweetened.

Next, add the creamy mixture to the large bowl of fruit and incorporate well but gently. Spoon mixture into hulled out fresh pineapple and coconut shells. Garnish with fresh edible flowers such as dandelions and roses OR a few cinnamon sticks. Fresh nuts, raisins and dried fruits such as cranberries can be added to this mixture for added texture and a healthy burst of flavor.

Low Fat, Low Calorie Party Appetizers, Punch & Munchies For Your New Year'FATHER TIME'S PARTY STASH: Mix together those famous CHEX (wheat, rice, corn) (the amount will depend upon the number of guests); add mini pretzel sticks, a few mixed nuts (I don't like peanuts in this mix though).  Coat thoroughly with no calorie butter (such as Parkay), then add Worcestershire to taste.  Bake in preheated 350 degree oven until hot.

Add LIGHT popcorn and mini rice cakes to the mix when cool, if desired.  This should feed an entire herd.

Low Fat, Low Calorie Party Appetizers, Punch & Munchies For Your New Year'PARTY NOTES: Be sure to have some lively music so your party won't fizzle out before the punch. If you offer alcoholic beverages, plan to hire or have on hand some designated drivers. No one ever plans an accident.
