1 Can Crushed Pineapple (unsweetened – sweeten to your preference with Equal) 1/4 Cup Refrigerated No Calorie Butter Spray 6 - 10 Packets of Equal (adjust to your preference) 2 Egg Beaters (1/2 Cup) 1 Cup Flour
1 Tsp Baking Powder Dash of Salt 1/3 Cup of Unsweetened Pineapple Juice 1 Tsp Vanilla
GLAZE: 4 Tbs Refrigerated No Calorie Butter Spray 3 Tablespoons of Brown Sugar, packed 2 Tbs lite maple syrup
Preheat your oven to 350 degrees F. Next, spray a 9-inch cake square pan with a no calorie cooking spray. Mix the glaze ingredients, then cook on low heat until thick and bubbly then pour in glaze mixture. Pour drained pineapple into the glaze mixture. In a mixing bowl, cream and sugar. Sift together flour, baking powder and the salt. Combine pineapple juice and vanilla. Stir the dry and liquid ingredients together. Spoon over the pineapple mixture. Bake about 35 minutes or until the cake springs back in center when gently pressed. Remove from the oven and allow to rest until cooled. Set the serving plate on top and invert cake onto plate. Serve warm and top with lite topping if desired. Topping can be mixed with a bit of vanilla or lite maple syrup to intensify the flavor. Servings: About 16. Calories: About 125 per serving.
