Our lower calorie recipe for chicken equals delicious!


Powwow Chicken is the latest recipe from the Diet Bites tasty-tested kitchen.  

The recipe is simple. The taste is WOW!

In fact this original recipe was so delicious that Tom and I wolfed it down before we got a photo to share with you.

Here is the ultra easy recipe. You will need the following recipe ingredients:

1 chicken breast which equals about 6 ounces and contains about 285 calories
diced onions, celery, bell pepper & parsley to equal 1 cup raw
capers (optional) - about 1 Tablespoon
frozen or fresh spinach - about 1 cup (use more if you wish)
2 slices of bacon, microwaved, drained and crumbled (50 calories)
salt, pepper
to suit personal taste
non-stick cooking spray
skim mozzarella cheese OR Harvarti cheese OR a couple of slices of your favorite reduced fat cheese

Preparing the chicken; be sure to use boneless chicken breast and remove the skin and all visible fat.

As to the onions and bell pepper ingredients - you can opt to use and variety of these specimens and any color. In fact, the brighter and bolder the colors, the prettier the recipe to the eyes.

And when it comes to weight loss, it's good to please the eyes because in turn, that generally pleases the tummy - or at minimum, adds pleasure to the eating process.

Diet Chicken RecipeAs to the capers, if you have never tasted them they are similar to green olives but hold a unique flavor of their own. Restaurants use them in salads, particularly the gourmet salads.

They are popular in Italian cooking and they are often used in cream sauces that compliment fish. Capers are green, small and round - about the size and appearance of an English pea.

Bacon: The reason why we want you to prepare it in your microwave is because almost-all of the oil will be extracted amid the cooking process. Bacon prepared in the microwave between two slightly moist paper towels contains about 25 calories per strip. Pan frying can increase caloric values time three.

Cheese: Use the reduced fat varieties to save fat grams which in turn will save caloric values. The added health perk is that reduced fat dairy products generally contain more calcium benefits than their full-blown peers.


How to Prepare Diet Bites Powwow Chicken

Slice the chicken breast into two portions. Pound them out until they are flat.

Next, place them in a non-stick skillet coated with cooking spray and pan-roast until the chicken breasts are golden brown on both sides and the meat juices run clear.  

Salt and pepper the chicken breast before or after it cooks - as you wish.  Remove and place the chicken on a plate.

Next, saute the chopped onions, celery, bell pepper, parsley, spinach and cooked bacon together on the stove top using the cooking spray. Add the capers when the onions start to caramelize.

Spoon the vegetable mixture over the pan-roasted chicken; top with a slice of your favorite cheese.

The cheese should melt beautifully on top of the hot vegetable mixture, but if for some reason it doesn't - as some cheese doesn't melt as well as their peers, then not to worry. Simply place the chicken topped with the vegetable into microwave for a few seconds - or until the cheese melts.

One of the best melting cheeses is gruyere and we highly recommend it at 110 calories per ounce. You would need one-half an ounce for this recipe - and when the cheese is sliced thin, the serving size is quite generous.

This low calorie recipe makes two very generous servings; each serving contains about 250 calories when using skim based cheese at 50 calories per slice such as skim mozzarella cheese.

The spinach pulls the tasty Powwow Chicken dish together and adds a healthy flair to the entree.

The bacon adds a wand of flavor and makes Powwow Chicken taste richer than it is which makes this dish very satisfying. Serve with 1/2 of a baked sweet potato or yam and a whole grain roll for each meal plate.
