Easy to Prepare

The basic recipe for crepes is simple and quite easy to prepare on a few conditions:

1. It takes a few times to get the hang of turning the pan around while cooking - but it can be easily mastered by almost anyone.

2. The type of pan that is used for cooking is essential - and must be well insulated and non-stick.

Recipe Ingredients for Crepes

1 1/2 cups of reduced fat milk; we recommend 2%
1 cup of all purpose bleached flour, sifted + 1/8 teaspoon of salt
2 large eggs
1 Tablespoon of vegetable oil

How to Prepare Crepes

Mix the ingredients in a deep bowl using a rotary beater or a whisk until they are well combined.

Picture of Diet Crepe RecipeHeat your pan and it should be lightly oiled. Remove from the heat source when you pour the batter into the pan. Use only about 2 Tablespoons of the batter for each crepe.

Turn the plate while cooking over the heat - taking care not to spill the batter on the heat source. They will start to curl on the edges as they cook.

Because these are ultra thin, they cook quickly and you only need to do such to one side. There should be no raw batter on the surface. Transfer after browning one side to a plate and fill with your choice of fillings.

Makes about a dozen and a half for about 50 calories each.

Serving Suggestions for Crepes

Fill as you would any wrap style food. Whether it's a batch of fresh sauteed vegetables - or sliced fruit mixed with reduced fat whipped topping, make sure that your filling is of a healthy mix.
