Nothing says Spring like Key Lime Pie and nothing says diet like our Key to Diet Success Lime Pie. So go slip on that 'Kiss the Cook' apron, and lets cook some good.... As a note, we do NOT like fat free or light cream cheese, but in this recipe it creates a perfect low fat, great tasting marriage with the pudding. Low Fat Recipe for Key Lime Pie 1 large box of sugar free, fat free vanilla pudding mix prepared with skimmed milk 1 graham cracker pie crust OR 1 vanilla wafer pie crust the juice of 1 large lime PLUS 1 Tablespoon grated rind off the lime 1 eight-ounce bar of fat free cream cheese. 5 - 10 packets of your favorite no calorie sweetener if extra sweetness is desired Beat cream cheese with 1/4 cup of skimmed milk until smooth; fold in prepared pudding and gently incorporate. Spoon into pie crust; decorate with grated lime. If you prefer, 1/3 tub of LIGHT or FAT FREE whipped topping can be added to the pie, then the grated lime. Be sure to account for the additional calories. Calories in one-sixth of pie: about 250 calories - depending upon the calorie content of your pie crust. This is a very generous serving - and a very refreshing springtime treat. We hope you enjoy!
