Tired of the cold? The sleet? The snow? If so, you need a break from Old Man Winter. Let's head out on our magical canoe and do a little Island Dieting! Now - grab your grass skirt because here is our 10 Step Diet Plan that will help dig you out of Winter's Chill & hit the Diet Beaches with a hula in your hips: 1. Dig out your Jimmy Buffett music. (Gee, I hope that 8-track player still works...) 2. Strow out a bag of scented rose petals. (Yes, the fake ones unless you currently live in a hot zone.) 3. Place a pretty blanket or satin sheet on the floor because this is where you'll be dining. It's cozy and this meal will make 'you want to get down'! Oh yeah to the Diet Hula! 4. Spray the dining area with orange cleaner to set the mood - or a can of gardenia scented spray. (Tip: Omit this step if you dining area is located near the bathroom.) 5. Candles - make the room look like a Kung Fu set revisited. (No need to shave your head.) |

6. You'll need the following items from your kitchen for decor purposes: serving dishes, utensils to eat with, a set or two of chopsticks and some perky glasses. If you have some spare tiny paper umbrellas laying around, stick those into your glasses just before serving time. 7. You'll need the following foods to prepare this low calorie, low fat dieter's delight of a meal that's on the sweet-tasting side & serves 2 very generously for about 450 calories each. One keynote: The following meal intentionally incorporates similar ingredients. We were shooting for a very sweet taste that was budget friendly. We have also divided up the courses so if you'd like to make them separately, that would also work well. Beverage: 1 coconut cut in half with as much of the coconut removed as possible (be careful!), and your favorite no calorie beverage (light cranberry drink works well). Pour beverage into shell. Reserve 1 small chunk of the coconut meat to use in preparing this meal. Seal remaining coconut meat to use at a later date. Main Course - Zippy Canoes: 1 small whole pineapple sliced in half (remove pineapple and cut into chunks), 1 small can of white chicken, drained, 1/2 head iceberg lettuce chopped into bite-sized pieces, 2 Tablespoons of either chopped walnuts or pecans, a few raisins (totally optional), 1 whole apple, chopped with the peeling left on. Mix all ingredients (only 1 cup of the pineapple will be used at this time) in a large bowl. Add LIGHT Mayo to your personal preference, as well as salt and pepper if desired. Carefully transfer to your pineapple Canoes. Orange Banana Boats: You'll need 2 bananas. Carefully peel down one side of the banana; carefully remove the banana. Tie the ends of the peels with a bit of ribbon or twine and fill with the following mixture: 1 cup of shredded carrots plus 1 Tablespoon of LIGHT Mayo plus 1 Tablespoon of raisins. Mix well before filling banana boats. Bread: Brush 4 slices of bread with no calorie butter spray OR you can use buttery non stick spray if desired. Next, brush on some of the juice from the pineapple. Pop into the toaster until just browned. Remove and dust with either a bit of powder sugar OR add a bit of butter spray. Dessert - Volcanic Mountain: Slice your 2 peeled bananas into very small slices. Add 1/2 cup of the cubed fresh pineapple, a Tablespoon of your nuts, the fresh coconut which has been grated, a few raisins, a few packs of no calorie sweetener and a few dashes of cinnamon. Mix well and transfer to two wine glasses - or any dish. (Clear, tall stemware tends to make a stunning presentation. It's the Brad Pitt of glassware.) Your fruity mixture will 'cone' out of the glasses like a tiny mountain. Dollop dessert with a bit of LIGHT whipped topping. Sprinkle top with just a dash of nutmeg OR cinnamon. Use nutmeg very sparingly. A little goes a very long way and a lot can be lethal. 8. Transfer meal to your dining area which should look nice and cozy with all the candles about. 9. Dim the lights. Use the chopsticks to eat with if desired, or your favorite utensils. 10. Enjoy the meal with your favorite person.
