1 medium sized can of pinto or red beans
1/2 cup of diced white sweet onion
1/2 cup of bite size green bell pepper
1 medium sized can of diced petite tomatoes
1 cup of your favorite salsa

Diet White Bean Soup Recipe

Sometimes, even when dieting, we get into a rut. I know that I have my favorite species when it comes to beans - but if I had never tasted the black bean, then I would have missed out on a truly delicious species.

Several years ago I discovered Adzuki and Cranberry beans at a farmer's fruit and vegetable market on a hot summer day.


Again - these are wonderful, unique beans that can add protein and dietary fiber to your weight loss plan while supporting weight loss and quelling appetite - all for minimal caloric values - about 100 kcals per 1/2 cup serving.

Today, I'd like to share our recipe bean soup which makes use of the white Navy bean. Great Northern whites can also be used instead of the Navy - or any variety of white bean that you have in your pantry.

Ingredient List for White Bean Soup

1 medium can of Navy beans
2-3 strips of bacon
1/4 cup of pickled jalapeno peppers
1/3 cup of chopped white onion

How to Prepare White Bean Soup

Start by cooking the white onion in a bit of vegetable oil - such as extra virgin olive oil or peanut oil, using the most minimal amount. While the onion is cooking, microwave the bacon until crisp, then crumble and add to the onions. These two ingredients will add a lot of flavor to the bean soup as will the jalapeno.

I like the pickled varieties but you can use fresh seeded jalapeno pepper if you wish. When pickled, simply chop and add to the onion and bean mixture. Add the Navy beans and you're ready to eat!  See Another Bean Soup Recipe
