Calories in Tomatoes, Calories in Prickly Pears

Sometimes the magic can be found right under your nose or in your own backyard...

- Tomatoes: 1 tomato contains about 25 calories.  As you can see, when combined with the 3 cups of lettuce above, you have the basic makings of a salad for less than 100 calories.  This is a lot of food for a minimal amount of calories.  However, the innocent salad base is often times boosted up to contain more calories than Farmer Joe's prize fried rooster.  Cheese, salad dressing, bacon, croutons - all big salad beefers!

- Prickly Pear: Yum yum!  If you haven't touched your tongue to the insides of one of these, it's something that your tastebuds must try!  A large prickly pear contains about 50 calories and is rich in Vitamin C, low in fat and in sodium.

Picking prickly pears is one of Tom's and my passions. First, we'll go out to photograph the beautiful cactus flowers, then a few months later, enjoy them as they have turned magically into luscious, mellow fruit that holds a wanding flavor of citrus.
