Mix all ingredients except Saltines. Form balls; pack tightly. Roll balls in crushed crackers. Chill until firm. Calories: About 200 calories for entire recipe.
Another version that will go well as an appetizer at your next party is to incorporate ALL of the above ingredients. You'll need another teaspoon of Mayo to hold the ingredients together. Next, roll balls in the juice of a fresh orange, then coat with dried parsley or chili powder if you desire some balls with kick.
