Excellent Low Carb Soup Recipe for Dieters

This low carbohydrate tortilla soup recipe is excellent for the South Beach Diet Plan or for any restricted-carb fat loss plan.

This low calorie version of Chicken Tortilla Soup is quick, healthy, and delicious and contains minimal ingredients.

In addition, it pulls together quite quickly. The chicken can be purchased in cooked form in the deli section of the market; even the rotisserie type chickens will work well. Simply remove the skin and chop the meat. Or, the next time that you roast a bird, prepare a bit more for this delicious soup recipe.

If you cannot locate the tomatoes that contain the green chilies, any variety of Mexican style canned tomatoes will work - or you can purchase the plain and add a drained can of green chilies.

This recipe will make 2 generous servings.

Recipe Ingredients for Low Carb Chicken Tortilla Soup

You will need the following ingredients to prepare:

1 can of chicken broth + 1 can of water
1 cup of cooked, cubed lean boneless chicken

1/2 Can of Ro-Tel diced tomatoes & green chilies

1 Teaspoon of chili powder

1 Tablespoon of lime juice

1 ounce of shredded skim or reduced fat white cheese
, such as low fat mozzarella
Homemade Tortilla strips (recipe included below)


How to Prepare This Recipe

In a saucepan, combine all of the above ingredients except for the reduced fat cheese. Next, simmer the ingredients for about 10 minutes or until the liquid is bubbly.

Serve while the soup is still hot alongside of the shredded cheese and tortilla strips so that the cheese will quickly melt into the liquid.

Preparation Notes for Tortilla Strips

Slice one corn tortilla shell into thin strips. Be sure to use corn rather than the flour versions as they will hold up in the hot liquid - and as with the lime juice, the corn is the traditional ingredient with this recipe.

These only take a few minutes or so to prepare and if you're short on time, then yes - you can opt to use baked tortilla chips or strips instead of preparing your own. In addition, check out the salad fixings in the produce section or the strips located in the salad dressing aisle by the croutons; while these strips are intended for salads, they work very well with this recipe. The flavor of the plain varieties is similar to the baked pita chips at the market.

To prepare homemade strips, start by coating the corn tortilla with zero calorie cooking spray so that it totally coats the tortilla. Now it's time to bake it so that it crisps.

Place the shell into a preheated 375-degree oven until crisp. Cut into strips or crumble and add to the warm chicken tortilla soup.
