Poked Bride Cake Recipe
You will need 1 box of vanilla or white cake mix with pudding in the mix. Prepare as directed on the box and back inside of a tube or bundt pan.
Remove from pan and allow to cool.
Add 2 cups of fresh or frozen strawberries to a blender and whirl. Add a shot of strawberry extract (optional). And add 1/4 cup of orange or pineapple juice. Mix ingredients well. Add sugar substitute if more sweetness is desired.
Using a long sturdy straw, poke holes in the top of the cake. Pour on the heated strawberry glaze.
Peaches & Cream Cake Recipe
Start with a vanilla cake mix with pudding in the mix - and a medium size can of peaches. Add two eggs to the cake mix along with the juice from the can of peaches. Mix with a beater for two minutes - or until all the lumps are gone. Cut the peaches into bite sized pieces and add to the batter. Also add 1 teaspoon of ground cinnamon. Stir to incorporate cinnamon and peaches.
Bake in your favorite cake pan. Goes well with coffee or tea, or as a light snack.
Pecan Nut Cake Recipe
Grab that box of vanilla cake mix with pudding in the mix again. Prepare as directed on the label - only use 1/2 of the recommended amount of cooking oil.
Pour one-half of the batter into a tube pan that has been sprayed with cooking spray to discourage sticking. Sprinkle chopped pecans around the ring. Next, sprinkle light or dark brown sugar on top of the pecans. Add remaining batter and bake as directed on the package.
Dreamy Angel Food Cake Recipe
You can either make your angel food cake from scratch or purchase a ready-made cake at the bakery. Using a sharp knife cut the angel food cake in half - separating it into two layers. Set the layer aside.
In a deep bowl, add 1 pint of sliced strawberries - or you can use blueberries or blackberries if you wish. Add 1/2 a large tub of light whipped topping to berries and fold to combine using a rubber spatula or spoon. Be very careful when folding the topping as it can easily turn to mush.
Spoon the mixture onto the bottom cake layer. Carefully add the top layer. Frost the exterior of the angel food cake with more light whipped topping. Decorate the top with whole strawberries, stems left in place for added beauty and color.
