Mexican Tortilla Soup & Lime
You will need the following ingredients to prepare this diet recipe: 1 large box of chicken bouillon, 1 small package of boned, skinless chicken, 1 Tablespoon of extra virgin olive oil, 1 cup of chopped onion and any variety of onion will do well in this recipe, 1 fresh lime, fresh chopped cilantro, 2 Tablespoons of ground chili powder, grated reduced fat white cheese and tortilla strips.
Add olive oil to deep pot and move around to coat. Add the chopped onions and the chicken.
Be sure to cut the meat into bite-sized pieces. Cook until chicken is done and juices run clear. Add the chopped cilantro; I use a lot of cilantro because I like the flavor - so adjust the amount based on your personal preferences.
Next, add the chili powder and coat the ingredients in the soup pot. Add the chicken bouillon and stir. When it comes to a boil cut off the heat and add a few squirts of fresh lime juice. Serve with the low fat cheese and a few tortilla strips. You can also use crumbled tortilla chips rather than the strips.

Bean & Cheese Tostada With Mexican Rice
Heat 1/2 cup of your favorite canned refried beans. Add a bit of ground chili powder to the beans for flavor. You can also add ground cumin and cilantro if you wish OR you can opt for a bit of salsa for seasoning. Heat the tostada shells in your oven or toaster oven. Smear with the beans. Top with shredded lettuce and shredded low fat cheese. Enjoy with salsa, chopped onion and jalapeno if desired.
You can prepare the Mexican rice in your slow cooker. Add raw white rice and the required amount of water.
Also add 1 chopped onion and 1 chopped bell pepper of any variety as well as petite canned tomatoes. Set your cooker as directed by manufacturer and the time that you'll be serving the rice.
If you prepare on the stove top, use a deep pot. Cook the onions and bell pepper using light margarine. Add the rice and coat well with the vegetables and margarine. Add the canned tomatoes and water.
Cover and continue to cook until rice is done. Or you can transfer the rice mixture to the microwave to complete cooking time using a microwave-safe container.
The amount of rice you use will depend upon how many serving you wish to prepare.
