Types of Honey

Honey is a fabulous ingredient to use instead of traditional white table sugar. If the local honey is used, it may even combat certain allergy symptoms that a local may be experiencing.

Honey can be made from so many different nectars - from dandelion honey to orange blossom. Here is a short list of various honeys including information on their textures and flavors.

Alfalfa Honey: When this hits your palate you should experience a very mild flavor that is quite light and pleasant. It is produced from the purple flowers of the plant.

Avocado Honey: This butter-flavored honey originates from the blossoms of the plant and is very dark in color.

Blueberry Honey: Light amber in color with a full-flavor typically associated with honey.

Buckwheat Honey: May contain more antioxidants than other honeys. Has a rich, warm flavor.

Clover Honey: This honey may vary greatly in color, depending upon which plant was used. It may be almost clear to an amber color. It has a very mild flavor.

Eucalyptus Honey: A very strong and potent flavor containing hints of a medicinal scent.

Fireweed Honey: Light in color with a warm flavor.

Orange Blossom Honey: Smells so good with a hint of citrus. It's a very mild honey with a light tone.

Sage Honey: Very light shaded with mild flavors.

Tupelo Honey: Remember the old song about the girl who was sweeter than Tupelo Honey? Like the girl, this honey is very sweet and is a full-bodied flavor. It is golden amber in color and you may note a green cast.

Different forms of honey include: crystallized, pasteurized, raw, strained, filtered, dried, whipped, comb and chunk.
