Who's Your Daddy Shake, a Diet Shake Recipe

Serves 4 for about 135 calories each

2 cups of ice cold skim milk
2-4 ice cubes plus 1-3 packets of Splenda or Equal if extra sweetness is desired

½ small box of sugar free lime flavored gelatin (powder only/no water)

1 small can of crushed pineapple (do not drain)

2 Tablespoons of cashew pieces

6 Tablespoons of whipped topping

Begin by heating the pineapple juice; add the lime gelatin to the juice and stir until fully incorporated. Blend all ingredients except whipped topping until light and frothy.

Pour into chilled beverage glasses. Add 2 Tablespoons of whipped topping to each serving, and sprinkle on a bit of grated lime peel for a beautiful garnish, if desired.

Weight Loss Tips, Low Calorie Recipes for Franks

Who says that franks can't be part of a weight loss plan. With some skinny varieties at the market containing 40 to 50 calories, lets invite old frank into our diet menu with the following low calorie recipes from Diet Bites.

Cowboy's Hot as a Pistol, Beans & Franks: Only three main ingredients: beans, franks and salsa.

The secret to this recipe is to cut the franks into 1/2 inch rounds and place them into a toaster oven on a sheet of tin foil. Or, you can use a skillet on the stove top if you wish. The toaster oven method produces the plumpest, most delicious flavors of the frank.

It only takes a few minutes for the franks to cook; remove and transfer them to a pan containing pinto or red beans. Add 1/4 cup of your favorite mild, medium or hot salsa and a few jalapeno slices. If you want a cheesy flavor added, use shredded low fat versions and use with a very light hand.

Serve with a wedge of fresh baked cornbread and reduced fat margarine. This is mighty good eatin', cowboy!

Low Calorie Split Cheesy Franks Served on our Spanish Rice Recipe

Another ultra easy recipe. Start with the leanest lightest franks available at your local market. Slice them down the middle - lengthwise, but not so deeply that the frank is cut in half.

Take 1/2 slice of your favorite reduced fat cheese (typically about 50 calories per slice) and break it into two small squares. To be clear, one slice of cheese makes four small rectangles. Tuck two of the rectangles into the split frank. Place under a broiler and cook until the frank is well cooked and the cheese is melted.

Remove and place on a bed of Spanish Rice. The recipe is located below.

Each frank with cheese contains less than 100 calories when light, low fat products are used.

Easy Spanish Rice Recipe for Dieters

If you are cramped for time, the prepackaged Spanish Rice will work just fine. If you have a bit of time on your hands, even better.

Put on a pot of water for instant rice. If you'd rather use the long cooking method and rice, then please do. In the end, we'll need two cups of prepared hot rice (white).

In a non-stick skillet place 1 teaspoon of extra virgin olive oil. Add 1/2 cup of chopped onion, 1/2 cup of chopped bell pepper and cook the vegetables until the onions are translucent. Add the cooked rice and stir to coat. Also add 2 Tablespoons of ground chili powder, 1 teaspoon of ground cumin and chopped fresh cilantro to suit your personal taste. Because we enjoy cilantro we use about 1/2 a bunch in our recipe.

Quickly add 1 medium sized can of petite diced tomatoes and stir to incorporate. Cover the pot and turn off the heat. Allow to stand about 15 minutes before serving. You can also add 1/4 cup of your favorite Mexican salsa if desired to ramp-up the flavors.
