Non-Alcoholic Diet Drinks - Our Sundown Shake
Serves 4 generously.
Skinny Shake Ingredients:
4 cups of ice cold skim milk
1 Tablespoon of honey
1 small box of sugar free lemon pudding (powder only, do not prepare)
1-3 ice cubes
1-3 packets of Splenda or Equal if extra sweetness is desired
Blend until light and frothy.
You'll need the box of sugar free pudding that serves 4. If you're planning on making a single shake, then simply measure out 1/4 of the pudding powder and use only 1 cup of reduced fat or skim milk and just a small spoon of the honey.
The shake should be thick - but not so thick that it cannot be enjoyed through a straw. If you need to add more milk to make it thinner, then certainly do such. You can also dust the top of the skinny shake with some gold sugar crystals if you wish - and white or clear sugar crystals work well, too.
Baked Potatoes, a Diet Recipe
This recipe goes very well with our Sundown Skinny Shake and a pan-roasted chicken breast. A light salad of lettuce, tomatoes and balsamic vinegar can be added as well as a slice of whole grain bread.
This recipe is very easy to prepare. Be sure to make use of reduced fat cheese which assists in keeping the caloric values low. Also make use of reduced fat sour cream and low fat evaporated milk.
To prepare this recipe you will need the following ingredients:
5 potatoes cut into 1-inch chunks, cooked with the water drained
3/4 cup of Evaporated Fat Reduced Canned Milk
1/2 cup of reduced fat sour cream
1/2 teaspoon of salt, cracked black pepper to suit your personal taste
1 1/2 cups of fat reduced shredded cheese
1/4 cup of Hormel's REAL Bacon Bits
1/4 cup of sauteed chopped onion
Add the bacon bits, canned milk, sour cream, onion, salt and pepper - along with 1/2 the amount of cheese to the cooked and drained potatoes.
Spoon into a casserole dish and top with the remaining cheese. If you're using potatoes that aren't hot, then cook the potato casserole for about 20 minutes in a 375 degree preheated oven, then top with remaining cheese and return to oven until the cheese is bubbly.
If the potatoes are hot, then you can cook the casserole with the shredded cheese on top.
You can use any of your favorite cheeses that melt well and that are reduced in dietary fat content. We like a mix of Colby and mild cheddar in ours. Mozzarella tends to be a bit too stringy.
