Take note that they are very high in sodium content - so if you are susceptible to the effects of Sodium Overload and are trying to avoid excess sodium in the daily diet, then olives shouldn't be on your personal menu.

Just one colossal ripe olive contains over 100 milligrams of sodium.

Generally, there are 3 olives to a serving for the large, extra large, jumbo and colossal sizes. That's over 300 mg's of sodium for three tiny olives - so therein the downside to this otherwise very flavorful food.

As to the small and extra small ripe olives, the serving size generally equals five olives.

Thankfully the sodium content dips significantly - to 1/4 that of the colossal. With five olives in the serving size, that equals just under 100 mg's of sodium content.

For a gourmet sandwich, use whole grain bread and toast using low fat margarine. Add slices of ripe olive and enjoy with a leaf of green lettuce, slices of tomato, a smear of spicy mustard and lean proteins. Add a slice of low fat cheese if desired.
