Banana, pudding, topping, vanilla wafers - oooh, how could a dieter not love this tasty shake? This shake is perfect for volleyball parties.

Shaky Pudding, a Diet Shake Recipe

Serves 6 for about 130 calories each

4 cups of ice cold skim milk
1 ripe, peeled banana (small to medium)

1 small box of instant sugar free/fat free vanilla pudding

12 vanilla wafers (6 cookies equals 140 calories)

1 Teaspoon of vanilla extract or imitation vanilla
1/4 cup of crushed ice plus sugar substitute if needed

Ground nutmeg

12 Tablespoons of low calorie, low fat whipped topping

Blend all ingredients except whipped topping and the ground nutmeg until thick and frothy. Pour into chilled glasses and add a dollop of the whipped topping; sprinkle with just a small bit of the ground nutmeg.

Canned hominy can vary significantly in calories so be sure to check the labels. Bush makes a delicious hominy that contains a 60 calories per serving - compared to 130 calories from a good number of the other canned hominy makers.

And what a versatile food! Diet Bites has a couple of very quick-to-prepare recipes that can be a part of a healthy diet plan.

Quick Hominy & Beans, a diet recipe

You will need the following recipe ingredients:

1 medium can of hominy, drained - either yellow or white will work
1 medium can of red beans
1 small can of tomato sauce
1/2 a package of taco seasoning

Simply combine all of the above ingredients in a deep pot. Be sure to drain the hominy as the juice will add an off-putting flavor to the recipe. Serve with a wedge of cornbread made from stone-ground cornmeal with a side of reduced fat margarine.

You can also add a bit of petite tomatoes to the recipe; Mexican seasoned tomatoes work very well. Or you can add sliced jalapeno peppers then spread the mixture into a casserole dish and top with shredded cheese, the reduced fat varieties. To take this recipe to another level, stir in some corn or tortilla chips before topping with the low fat shredded cheese.

In addition, Mexican salsa also makes a great optional ingredients for this recipe. As you can see - it can be taken in so many different delicious directions.

Pan Roasted Hominy, a diet recipe

Add a Tablespoon of extra virgin olive oil to a non-stick pan and heat but not to a sizzling hot point. Thoroughly drain a can of white or yellow hominy.  If it is not thoroughly drained, then the liquid will make the olive oil splatter.

Add the hominy to the olive oil and slowly roast for about ten minutes; be sure to turn the hominy in the pan ever now and then so that it cooks evenly.
