Ho ho ho! Santa's racing to down the chimney tonight to enjoy his peppermint-laced, diet friendly shake - so rich that he won't even need a chocolate chip cookie.

Better yet, he'll have no trouble shooting back up the chimney.

Santa's Whiskers, a Diet Shake Recipe

Serves 2  for about 165  calories each

Blend all ingredients below except  the trio of peppermint sticks and the reduced fat whipped topping.

Simply pour the frothy mixture into two chilled serving glasses.

By the way, you'll need very large glasses as this skinny shake recipe has a lot of volume.

Top each with 2 Tablespoons of the light whipped topping. Crush 1 peppermint stick and sprinkle onto topping as garnish. Place other 2 sticks inside of shakes as edible ‘stirrers’.

Skinny Shake Recipe Ingredients:

2 cups of ice cold skim milk
4 peppermint sticks (40 calories each)

1 dot of red food coloring, optional for a redder color

¼ teaspoon of peppermint extract

1/4 cup of crushed ice plus sugar substitute if needed
4 Tablespoons of light, reduced calorie whipped topping

Let's get right to our recipes, shall we? Let's start with a three bean salad recipe that is very simple to prepare and tastes absolutely awesome!

You will need the following ingredients for this recipe:

1 medium sized can of green beans
1 medium sized can of dark kidney beans
1 medium sized can of yellow wax beans
1/2 cup of Splenda that measures like sugar
1/4 cup of distilled white vinegar
dash of celery seeds

Heat the vinegar on the stove top and remove from heat. Add the Splenda to the vinegar and stir to fully dissolve. Pour this mixture over the drained cans of the beans. Add just a dash of the celery salt; too much will ruin the recipe - so be gentle when shaking.

If you would like more liquid, then double the ingredients.

Green Beans, Potatoes & Cornbread

You can create a very quick meal using canned green beans and canned potatoes. Open the can of green beans and place into a pot under medium heat.

Open a can of either whole or sliced potatoes and drain thoroughly. Add to the green beans. Also add 1 Tablespoon of real bacon bits - Hormel makes an excellent product.

Allow the mix to heat thoroughly. Serve with a side of stone-ground cornbread and low fat margarine.
