This honker of a shake will get your taste buds to tingling and your Diet Heart to singing.  Healthy strawberries, milk and a dash of strawberry powder to take the shine off the strawberries delivers a dazzling, happy drink for dieters.

Ruby Doobie Do, a Diet Shake Recipe

Serves 2 for about 125 calories each

2 cups of ice cold skim milk
1 cup of ripened, washed and stemmed strawberries

1 Tablespoon of REAL vanilla extract

2 Tablespoons of Quick ‘Strawberry’ powder

1/4 cup of crushed ice plus sugar substitute if needed

Combine all of the skinny ingredients in a blender; blend until thick and frothy. You can opt for frozen strawberries if you wish and omit the crushed ice. Be sure to drink your skinny shake while it is still cold.

Let's get right into our low calorie recipes which feature corn as the star, shall we?

Corn Cakes, a diet recipe

You will need the following ingredients:

1 small package of cornbread or corn muffin mix
1 egg plus the recommended amount of vegetable oil
1/2 cup of drained canned corn, whole kernel

Mix the cornbread as directed on the package and add the corn. Drop by spoonfuls into a muffin pan that has been sprayed with cooking spray so that sticking doesn't occur. You want the corn cakes to pop out nice and golden brown rather than adhering to the pan.

Bake as directed on the package; enjoy hot with reduced fat margarine and a bowl of chicken soup.

You can prepare a corn pudding of sorts by using the above recipe and rather than whole corn, add 1/2 cup of creamed corn to the recipe and bake as directed on the cornbread package. Cut into squares and enjoy.

Pan Roasted Corn, a diet recipe

You will need a medium sized can of drained corn and a Tablespoon or two of extra virgin olive oil. Heat the oil in a pan on the stove top. A non-stick pan works best because less oil will be necessary. We don't want the corn to stick to the pan - we just want it to roast very slowly until it reaches a golden brown stage.

You can also use frozen corn in this simple recipe if you wish.

Roast the corn for about ten minutes; turn to ensure it roasts evenly. Serve as a healthy side dish. You can season the corn with other healthy foods if you wish such as sautéed mushrooms, onions, celery and bell peppers - and then add extra lean ground beef that has been cooked thoroughly. Transfer to a casserole dish; top the corn and beef mixture with grated low fat cheese.

Roasted Corn & Bell Peppers, a diet recipe

A simple mix of bell peppers that are green and red compliment the yellow of the corn so well. Simply chop the bell peppers and remove the stem and seeds. Roast along with the corn on the stove top.
