Serves 2 for about 250 calories each

2 cups of ice cold skim milk
can of packed pumpkin

1 teaspoon of ground cinnamon

Dash of ground ginger

Dash of ground nutmeg

Dash of ground cloves

Pumpkin Bread, a diet recipe

The following ingredients are required for this lower calorie pumpkin bread recipe:

1/4 cup of vegetable oil
4 eggs - or you can use egg substitute if you're concerned about cholesterol issues
2 cups of all-purpose flour plus one teaspoon of baking powder
1/2 teaspoon of pumpkin pie spice
1 cup of Splenda which measures like table sugar
1 teaspoon of vanilla extract or imitation vanilla
1 cup of canned pureed pumpkin

Bake in a preheated 325 degree oven for about an hour or until the bread is fully cooked. You can use the 'insert a toothpick' method for testing if you wish.

Simply combine all of the above ingredients and transfer to a loaf or ring baking pan that has been treated to prevent sticking.
