The moon peers curiously through the dark clouds of the evening, seeking a dieter to cozy-up to. Our Moon Nectar Shake is a filling treat that works well as a snack or a dessert.
Moon Nectar, a Diet Shake Recipe
Serves 3 for about 185 calories each
1 cup of orange sherbet (220 calories per cup)
2 cups of ice cold skim milk
½ small carton of light, reduced fat whipped topping
1 teaspoon of grated orange peel, if desired
1/4 cup of crushed ice
Blend the orange sherbet and milk. In a small bowl, gently combine the grated orange peel with the reduced fat topping. Reserve 3 Tablespoons of the topping.
Alternately layer the orange sherbet mixture in a pretty clear glass with the topping that has been incorporated with the peel. Top each serving with 2 Tablespoons of ‘snow-white’ topping. Or you can also sprinkle orange peel on the final layer of topping rather than leaving it snow white. Also, white sugar crystals look very pretty on top as decoration.
Be sure to enjoy this skinny shake while it is still nice and cold - as it isn't as thick when it starts to get warm.

Erma's Eggplant, a low calorie recipe
You'll need one very firm eggplant. Slice into thin strips and dip into an egg wash. If you are concerned about the cholesterol content in eggs then use egg substitute - or simply use the white of the egg which contains zero cholesterol.
Next, coat the eggplant in Panko bread crumbs; add salt and cracked pepper to the crumbs before coating the eggplant. Place the breaded eggplant into the oven and bake at 350 degrees until crisp.
Remove and top with 1/2 slice of reduced fat cheese of your choice along with 1/4 cup of your favorite marinara sauce.
Quick Tender Carrots, a diet recipe
You will need the following ingredients for this recipe:
1 small bag of baby carrots
1 Tablespoon of ground cinnamon
1/2 teaspoon of vanilla or imitation vanilla
1 Tablespoon of extra virgin olive oil
salt & cracked pepper
Boil the carrots until they are tender. Remove and place into a non-stick skillet that contains the heated olive oil. Turn to coat; add salt and pepper along with the ground cinnamon. Lastly, add the vanilla.
