The Milkmaid, a Diet Shake Recipe
Serves 2 for about 118 calories each
1 ½ cups of ice cold skim milk
(135 calories)
1 Teaspoon of vanilla, imitation vanilla extract works very well
1 single serving container of Activia Reduced Sugar, Vanilla Flavor (110 calories)
1-3 ice cubes
plus 1-3 packets of Splenda or Equal if extra sweetness is desired
Blend all ingredients and pour into chilled glasses. Enjoy while cold.

Skinny Chili: You will need the following ingredients for this vegetarian style chili: 1 medium sized can of red or pinto beans, 1 medium sized can of diced tomatoes, 1 large onion that has been peeled and chopped, 1 bell pepper of any color that has been seeded and chopped, 1 medium sized can of dark red kidney beans and one package of your favorite Mexican taco seasonings.
Using just a bit of extra virgin olive oil, coat the bottom of a deep pot and cook the onion and bell pepper until the onion appears translucent. Be sure to stir the vegetables to ensure even cooking.
Simply add all of the other ingredients and heat until bubbly and hot. Serve with shredded low fat cheddar cheese and crackers and chili sauce.
This is very good, very filling eating - and takes less than ten minutes to prepare. You can save a bit more time by using a frozen tri-mix of celery, bell pepper and onion if you wish. The celery doesn't impact the flavor of this recipe.
Skinny Nachos
Yes, you can still have nachos and lose weight too. Place one recommended serving of restaurant style tortilla chips on a plate that can be used in your microwave. Look on the package and view the nutrition label to determine how many chips equal a serving size.
Next, heat queso that comes in a jar as you normally would. Pour two servings worth onto your nachos. The queso typically contains 45 calories per serving.
The restaurant style tortilla chips typically contain about 140 calories per serving - so we're up to about 250 calories at this point.
From here, you can add sliced black olives (25 calories per 5 medium sized olives), light low fat sour cream (40 calories per serving) and sliced jalapeno. You can also toss on a few black beans if you wish.
Skinny Tacos
Prepare one pound of extra lean ground beef. The entire pound contains about 620 calories and 23 total dietary fat grams. This is ample meat for ten tacos but if you enjoy beef, then feel free to stuff them. Add a crisp salad, some shredded low fat cheese and your favorite salsa.
To season the beef, you can use your personal spice rack or a commercially prepared packet of seasonings.
If you opt for your spice rack, the following is a good mix: 2 Tablespoons of ground chili powder, 1 teaspoon of ground cumin and a bunch of chopped cilantro.
