Did someone say lemon pudding? Then count me in - particularly when it involves 120 teensy calories. Oh my, I feel like I've just went to Lemon Pie Heaven.
Lemon Pie, a Diet Shake Recipe
Serves 4 for about 120 calories each
4 cups of ice cold skim milk
1 small box of sugar free/fat free instant lemon pudding
1 teaspoon of vanilla extract
or imitation vanilla
1/4 cup of crushed ice; sugar substitute if needed
8 Tablespoons of reduced fat whipped topping, thawed state
1 teaspoon of grated lemon peel for garnish, if desired
Blend all ingredients except topping and lemon peeling until thick and frothy. CAREFULLY incorporate the topping by folding it into the milk mixture. Spoon or pour into chilled glasses and serve immediately. Top with grated lemon peel, if desired.

You can start with a box of commercial cake mix - lemon flavored with pudding in the mix. The pudding tends to add a moister texture to the cake. You will also need the following ingredients for this lemon cake recipe:
1 teaspoon of lemon extract (use more if you like more lemony flavor)
1 teaspoon of vanilla extract or imitation vanilla
2 single serving containers of low fat lemon yogurt
grated lemon peel
And of course, you will need the recommended amounts of eggs and oil listed on the package. As to the recommended amount of water, add the extracts to the water before adding to the cake mix.
Prepare the batter as directed on the package; stir in the lemon yogurt and the lemon peel.
Simply bake as directed on the cake mix package. We recommend using a tube pan or a square pan because this low fat lemon cake recipe serves as a 'coffee cake' or 'tea cake' because it isn't going to get a coat of frosting.
