Funky Monkey, a Low Calorie Diet Shake Recipe

Serves 3 for about 100 calories each

2 cups of ice cold skim milk (135 calories)
1 ripe, peeled small banana
(about 80 calories)
2 Tablespoons of Macadamia nuts

2 Tablespoons of Marshmallow Fluff

1-4 packets of Splenda or Equal if extra sweetness is desired

Blend all ingredients until frothy. Be sure to blend the ingredients thoroughly to make the nuts and the marshmallow fluff a drinkable state. Pour into chilled beverage glasses.

Top with reduced fat whipped cream in a spray can (15 calories per serving) if desired. Be sure to enjoy this skinny shake while it is still cold.

Low Calorie Crumpet Recipe

This recipe is very light and compliments our Funky Monkey skinny shake quite well.

You will need the following ingredients to prepare this recipe:

 1 cup of all-purpose white flour (about 400 calories)
1/3 cup of white table sugar or you can use half sugar and half Splenda (about 275 calories if real sugar is used)
3 teaspoons of baking powder
1 large egg, and yes you can opt for egg substitute if you wish (about 100 calories)
1/2 cup of reduced fat or skim milk (about 45 calories)

Combine the above ingredients using a large wooden spoon. Crumpets are traditionally fried in butter but we don't want to do that or it may blow up our bathroom scales.

Therefore, use butter flavored cooking spray. If you have an egg mold used to form eggs as they are fried, this little kitchen utensil works quite adequately for the crumpet batter. Be sure to spray the utensil with cooking spray to discourage sticking.

Cook the crumpet batter until it is done on both sides. You can cook to a golden brown stage if you wish; the longer they are cooked, the more crunchy they become.

The total recipe contains about 850 calories and produces quite a number of crumpets. The number of course depends upon how big or small that you make the crumpets.
