Cheesy Chicken and Rice Dish

Easy Recipe for Lunch or Dinner Meal

This recipe for Cheesy Chicken Rice is a lower version of the comforting favorite - lower in caloric content as well as fat content.

This recipe requires the following ingredients to prepare:

2 cups of cooked chicken breast, cubed
1 cup of quick cook rice such as Minute Rice
1 cup of shredded reduced fat cheese either yellow or white
1 Tablespoon of Ground Chili Powder
1 Teaspoon of Ground Cumin (optional)
fresh chopped cilantro

1 cup of diced onions, purple - white or yellow varieties
1 cup of finely sliced celery, including celery leaves
1 small can of chicken bouillon (about 1 1/2 cups)
salt, cracked pepper and 1 Tablespoon of extra virgin olive oil

Place the oil in a deep skillet and heat. Add the onions and celery and turn with a spatula or spoon to fully coat with the olive oil. Add the chicken and coat it as well. Add the cook quick rice then add the chicken broth.

Cover the skillet and allow the rice to fully cook. Remove the lid and add the seasonings (fresh cilantro, cumin and ground chili powder).

Stir to combine the spices thoroughly. Add salt and pepper as desired. Add the cheese on top of the skillet and allow to melt.

Tiny Chicken Sandwich Recipe

Tiny sandwiches can assist in curbing appetite while keeping your weight loss plan in check.

The next time that you prepare chicken tenders or thin strips of chicken breast, prepare them using cooking spray on the stove top. Pan roasted chicken is absolutely delicious whether served hot or cold. Be sure to add salt and pepper.

Seal the leftovers in an air-tight container and you're ready, set and go - for tiny chicken sandwiches.

Enjoy the pan roasted chicken between a biscuit, between a small hamburger bun or as a fold over sandwich on whole grain bread.

Adding lettuce and tomatoes can add nutritional values to the tiny sandwiches. Using just a bit of light or reduced fat sandwich spreads keeps caloric values at a minimum. Better yet - yellow mustard or spicy mustard is a fantastic spread choice.
