Diet Recipes: Chickpea Salad, Italian Eggplant & Hominy Bake
Chickpea Salad Chickpeas are a fantastic source of fiber and protein and can assist in keeping the dieter feeling full for long periods of time. I like to drain my canned chickpeas - also commonly called Garbonzo Beans. Then I place them into a deep non-stick skillet and pan roast them using just a tab of extra virgin olive oil. They are truly delicious. These can also be added to a salad mix of lettuce (any variety) tomato, sliced cucumber - and any of your favorite vegetable combinations. We often enjoy the following Chickpea Salad mix: Spring greens, cherry tomatoes, sliced cucumber, sliced button mushrooms, dried cranberries, chopped pecans or walnuts, chickpeas, seasoned croutons and light salad dressing - such as a fruit based dressing. Hominy Bake This is another very simple recipe from Diet Bites that is very delicious and so easy to prepare. You'll need a medium size can of white hominy and a medium size can of yellow hominy. Drain the cans and pour the hominy into a deep non-stick skill that has been coated with a very light layer of extra virgin olive oil. Toss in 1/2 cup of chopped onions. You can use any variety - yellow, white or purple or even leeks or shallots if you wish. Also add 1/2 cup of bell pepper, again - any variety of yellow, red or green. You will need to chop the bell pepper or cut it into thin strips before adding to the hominy. Next add four pieces of crumbled microwave bacon. When cooked in the microwave, bacon contains only 25 calories or so per slice. Finally, when the hominy mix is thoroughly heated and the onions and peppers are tender, add 1 cup of reduced fat shredded cheese of your choice - either white or yellow. Italian Eggplant With Marinara Sauce Slice a fresh eggplant into several thin rounds. Dip into a bowl that contains beaten egg white. The whole egg - yolk and the white can certainly be used instead of just the white but the yolk contains about three times the caloric values of the white and omitting it saves calories - as well as cholesterol. The white contains zero cholesterol. Next, dip the eggplant into Panko breading crumbs. Be sure to add salt and pepper to the breading to add flavor to the eggplant. Place into a non-stick skillet sprayed with cooking spray. Cook the eggplant until golden brown and tender. Remove and top with warm marinara sauce. Add a bit of grated reduced fat cheese and allow to melt before dining.
