Egg Salad Sandwich Recipe

This is a very simple egg salad recipe that requires one egg, two slices of whole grain bread, a squirt of yellow mustard, a spoon of light fat reduced Mayo and a spoon of pickle relish.

While the bread is toasting in the toaster, smash the egg and stir in the other ingredients. Add salt and cracked pepper to suit personal taste.

To take this egg sandwich up a notch add any of the following to the egg mixture: pimentos, sliced green or black olives, chopped onions, dill pickle and paprika. Or to the sandwich: sliced tomato and lettuce.

Egg Sandwich

Our egg sandwich recipe is also ultra easy to prepare. Simply cook one egg on the stove top. If you like the yolk runny, then cook to sunny side up stage. If not - then cook to the hard stage.

Smear Miracle Whip Light onto fresh potato bread. Add the cooked egg, salt and cracked pepper. Delicious!

Fish Sandwich

For this recipe, fresh grilled fish can be used to keep the caloric values minimal. Fish sandwiches can still remain low in calories, even when the fish is breaded because fish is so low in calories to begin with. Take McDonald's Fillet-O-Fish. Without the slice of cheese, it contains just a tab over 300 calories. Remove the tartar sauce and the calories decrease to the 200 range. For all the fast food sandwiches out there, they do a really nice job. They are very tasty indeed.

We're going to use a breaded fish patty for our homemade fish sandwich as well. Our breaded fillet contains 110 calories. We'll cook it in the toaster oven as directed on the commercial package.

While the fish is cooking we're going to make our own tartar sauce because fresh tastes better than the bottled stuff. We'll need a teaspoon of Miracle Whip Light, a teaspoon of sweet pickle relish and 1/2 teaspoon of finely chopped onion. Mix this well and spread it onto a small hamburger bun that contains about 100 calories.

When the fish is thoroughly cooked, place it inside the hamburger bun. Now we have a delicious homemade fish sandwich for less that 250 calories.

Diet Sandwich Tips

Here are a few tips for creating low calorie sandwiches at home:

- Opting for mustard over Mayo saves a plethora of calories and fat grams;

- Use healthy whole grain bread when available;

- If the sandwich contains cheese, make sure it is a reduced fat variety;

- Only use lean cuts of meat with all visible fat removed;

- Opt for oven roasted ingredients rather than fried.
