Fresh, frozen or canned peas all work well and each produce a unique and different flavor. For the first layer, add about 2 inches of shredded green lettuce to the bowl. Add a layer of drained English peas. Now add a layer of shredded reduced fat cheese - either yellow or white will do nicely. Add a layer of white chopped onions, chopped pickles and pimentos that have been combined. Add a small layer of reduced fat Mayo or Light Miracle Whip. Repeat the layers ending with the English peas. As the diners spoon the salad, the ingredients will 'self-mix'. Fresh Fruit Salad Recipe We're going to create another layered salad that's healthy and low in calories only this time, instead of using vegetables we're going to work with fruits. Start by adding a thick layer of sliced banana to the bottom of your serving bowl. Again, a clear serving dish will showcase the beauty of the fruit. Next, add a layer of sliced strawberries. Next, add a layer of sliced kiwi, then a layer of pineapple tidbits. Allow the juice of the pineapple to flow over the existing layered fruit. Sprinkle on a bit of light or dark brown sugar. Cover the top of the pineapple tidbits with a thick layer of light whipped topping. This fruit salad recipe is very amendable and nothing is set in stone. You can go on to add purple or green grapes, peaches, and even citrus based fruits such as oranges. Apples with the skins also look lovely in the mix. Broccoli & Water Chestnut Stir Fry This stir fry recipe is very easy to prepare and requires minimal ingredients. You'll need some broccoli florets, just a bit of your favorite meat (chicken, turkey, beef or pork) and a can of water chestnuts. Prepare the meat in a deep pan on the stove top using cooking spray to prevent sticking if necessary. Add the broccoli and keep stirring until coated with the juices of the meat. Add about an inch of water and cover with a lid so the broccoli can steam. Next, add the drained water chestnuts and a bit of your favorite Asian sauce.
