Low Calorie Key Lime Pie

Our Delicious Diet Key Lime Pie Recipe

We couldn't discuss the lime without including one of the most beloved pies around the world. Ours is reduced in calories so that it can fit into a healthy weight loss plan.

You will need the following ingredients:

1 All-Purpose Flour Pie Crust - you can opt for graham cracker if you wish
4 Large Eggs, the yolks and whites separated
1/2 teaspoon of Cream of Tartar
14 ounces of reduced calorie condensed milk
grated rind plus the juice from three large limes; if you use the key limes, you'll need to use more based on the size of the specimens
2 Tablespoons of Splenda which measures like sugar 

How to Prepare

Start by lining a quiche or tart pan with the pie crust dough. Be sure to treat the pan for sticking before arranging the dough. Trim off any excess so that you have a neatly filled pan.

Preheat the oven to 325 degrees while you prepare the filling.

Beat the egg yolks with a mixer using a deep bowl to prevent splatters; they need to reach a creamy state. Beat in the reduced calorie condensed milk along with the rind and juice. You can add a bit of green food coloring if you wish - but this is totally optional. Beat until this mixture is very thick.

In a separate bowl, beat the egg whites until they form stiff peaks. Add the Cream of Tartar to assist in the process. Carefully fold this mixture into the other mixture. Pour into the pie shell and bake for about 20 to 30 minutes, depending upon your oven's heat. The filling will start to brown when the pie is done. Chill thoroughly before eating.
