There are so many varieties of lettuce - not just the round head of iceberg. And there are so many things you can cook with lettuce. While it may not be the star on your menu, it can enhance your meal while adding texture and volume.

Diet Recipes for Bibb Lettuce

Tavern Tacos: Grab a can of delicious black beans. Add 1 Tablespoon of chili powder, 1 teaspoon of ground cumin and a shot of your favorite salsa. Heat until hot in the microwave. Also make a large salad containing Bibb Lettuce that is finely chopped, cherry tomatoes cup in half or you can use chopped tomatoes, and a bit of chopped onions.

To assemble the Tavern Tacos drain the beans and fill a warm corn shell with the black beans. Top with a large mound of the salad. Add shredded cheese if desired and a dollop of sour cream - either light or full-blown. Regular sour cream contains only 20 calories more than light.

Serve with your favorite salsa. You can also use flour tortillas if you prefer them over corn.

Fried Chicken Salad: Next time you go to McDonald's grab a few extra Chicken McNuggets. Warm them in the microwave and toss them into a salad mix of finely chopped lettuce, chopped tomatoes, sliced cucumber, a few dried cranberries and chopped walnuts. Drizzle salad with your favorite low calorie honey mustard salad dressing or other light variety of salad dressing. Enjoy a few croutons and real bacon bits in the salad if desired.

The Chicken McNuggets contain a skinny 50 calories each and reheat very well. You can also use frozen chicken tenders for the salad and simply cut them into small pieces if desired.
