Skinny Calories - Only 200 Kcals Per Burrito

What can you enjoy while dieting for about 200 calories? How about our delicious Bean & Cheese Burrito? Let's get to the low calorie recipe, shall we?

The key to keeping burrito calories low is its wrapping paper - or more exact, the flour shell. If you'll check the label you'll quickly discover than caloric values range from a skinny 80 calories per flour tortilla shell to well over 200 calories. The bigger the shell - the more the calories.

Tips on Keeping Calories to a Minimum

Therefore, to keep our Diet Burrito low in calories as well as keep dietary fat under er...wraps, we're opting for that 80 calorie flour tortilla shell.

There's no need to drown it in grease as many fast food and even fine-dining establishments do at times.

Simply place the flour shell between two moist non-printed paper towels and heat in the microwave.

A quick zap of about 10 to 15 seconds should be all that is required. If the shell is overcooked, it will quickly get too hard to eat and the diner will require a pair of nippers in order to get bite-sized bits.

If you don't  have a microwave then heat the flour shell on the stove top in a nonstick pan. An well-seasoned iron skillet is fabulous for heating tortilla shells.

The Recipe Ingredients

Here is the full recipe list of ingredients that you will need to prepare this recipe:

1 flour tortilla shell (80 calories)
chopped onion (optional)
salsa (your favorite brand)
1/3 cup of pinto beans or red, brown or black beans (60 calories - and canned beans work great)
chili powder, ground cumin (optional)
1 slice of reduced fat cheese (50 calories)

HOW TO PREPARE DIET BURRITO

We've already heated our burrito shell so now we're going to stuff it will filling.

To prepare the filling, mash the beans with a fork; add a little salsa - then a spoon of the ground chili powder and mix. You can also add the ground cumin if you wish - or you can skip both of these spices and simply use the salsa.

Heat the bean mixture and spoon it onto one side of the warm flour tortilla shell. Add the cheese; the heat from the shell and beans should quickly melt the cheese. Add onions if desired. Roll to form your burrito.

Use additional salsa for dipping OR you can use a bit of light sour cream for and additional 40 calories per serving.

Serve with a side of rice and shredded lettuce. Unsweetened tea or diet soda goes very well with the Diet Burrito.
