Sound of snapping fingers, the faint echo of a bongo drum and people in the background saying 'cool' 'man' 'cool':

Dig those tasty root vegetables, man! That tuber is one cool Daddy-O.

Don't skip out on the other cool veggies diggin' around in your dirt such as beets, turnips, kalorabi (no, this veggie's not religious), onions, garlic, radishes (hot man hot), potato, sweet potato, ginger, horseradish (cool man cool), carrots, parsnips, daikon and rutabagas - and the beat goes on...

There's a lot to dig in beatsville where roots are the swingers of the wild diet world. Garlic, horseradish, ginger and onions are like crazy man, when it comes to cool health.

So jazz up your diet today. Get cool. Get groovy. Get to diggin' those roots and start jazzin' 'em up in your diet as well as those above-ground dudes. One doesn't have to be a tuber in order to be healthy.

Low Calorie Root Veggie Recipe

Okay daddy-o, this cat's gotta split. You dig? But wait - let's not split before we look at one cool recipe featuring root vegetables. This makes a ton of food - so this recipe works well for parties or large gatherings.

Grab your sunglasses because it's important to look as cool as your tubers....

You will need the following ingredients:

1 bag of whole carrots
6 white potatoes
1 large onion
sprigs of rosemary, salt, pepper
4 ears of corn
4 sweet potatoes
extra virgin olive oil

How to Prepare This Recipe

You can roast your roots on a grill OR in your oven.

Start by peeling and cleaning your veggies. Half or quarter the larger ones. Rub briskly with the olive oil. Add the salt and pepper and place onto the grill or on a pan that will go into your oven.

I use a cast-iron flat 'pan' which has 'grill' marks embedded on the surface. And as the vegetables cook, the ridges create 'grill' marks.

Top with sprigs of rosemary.

Cook until the veggies are nice and tender. This is a fantastic meal - and all you really need is a loaf of crusty bread and a bit of margarine along with a tall glass of iced tea. And oh....sunglasses.
