Recipe for Diet Broccoli Cheese SoupOur recipe for one of the most popular soups on the menu - Broccoli Cheese Soup. Ours in low in fat and calories. The Recipe for Low Calorie Broccoli Cheese Soup
2 ounces of skim white cheese, grated
1/2 to 1 cup of skim milk (depending upon
how thick that you like your soup)
1/4 cup of frozen chopped broccoli, cooked
& drained
salt, pepper to taste
Heat milk in microwave until very hot but not boiling. Carefully remove and add the cheese. Stir until cheese if fully melted. Add broccoli. Salt and pepper to suit personal taste. Recipe will make a single serving for about 190 calories. We based this diet friendly on cheese that contained 70 calories per ounce (skim mozzarella) and skim milk containing 89 calories per cup. The calorie content includes one-half cup of milk. To make a family-sized pot of low calorie broccoli cheese soup, use 1 block (8 ounces) of skim cheese, about 3 cups of skim milk (you may wish to add more or less depending upon how thick and cheesy that you like your soup) and 1 cup of frozen chopped broccoli.
