Whenever I think of any type of pepper, I can't help but be reminded of the Quizno's commercial which aired several years ago and featured the Sponge Monkeys. My husband and myself thought that commercial was absolutely hilarious and when the Sponge Monkeys would sing, "And we've got a pepper bar," we'd break out laughing each and every time. Whether we're both crazy, or have an over-abundance of joy at times, peppers in the diet can assist in weight loss. Now take note that we're not referring to hot pepper sauce which has been touted to melt pounds if only the individual seeking weight loss will have enough courage (or perhaps stupidity) to drink the stuff. Without a taco or respectable burrito even. We're talking about peppers from the garden - all varieties of bell peppers, jalapeno peppers, ancho peppers (which are hotter than you know what), cherry pepper - and of course the cute yellow pepperocinis. The next time that you enjoy a salad, try tossing in a few slices of your favorite types; when it comes to the bell pepper you have so many colors to pick from - or you can use them all for a multi-colored salad. As to the hotter peppers, they can substitute nicely if you don't have chili powder, cayenne or salsa on hand for that special recipe. As to the pepperocinis, try slicing them and adding them to extra lean ground beef and....well shoot, let's just look at the full-blown recipe, shall we? Pepperocini Tacos, a lower calorie taco recipe THE RECIPE INGREDIENTS - 12 hard corn shells; these contain a skinny 50 or so calories each, so you can enjoy several on your meal plate; perhaps 3-4 - 1½ pounds of extra lean ground beef; and you'll need to purchase the leanest available; 3 ounces of the 10% fat and 90% lean contains 173 calories cooked and 9.09 total dietary fat grams. One pound raw contains 798 calories and 45 total fat grams. One pound of cooked extra lean ground beef contains 925 calories and 48.49 total fat grams - and about 115 protein grams. Take note that the ground beef will cook down from one pound - so therefore our recommendation for 1½ pounds for the taco recipe. To illustrate the vast caloric and dietary fat difference between extra lean ground beef and 30% ft, 70% lean - one pound in raw form contains over 1,500 calories and over 65 total dietary fat grams. And one more perk is that the leaner beef will not cook down as much as the fatty stuff. - You will also need a shredded salad mix of lettuce, tomatoes, cilantro, sliced pepperocinis and onion. What a healthy mix, eh? Also have on hand a bit of reduced fat shredded cheese to place on top of the salad mix - and if you have a favorite salsa, put that on the table, too. - You can use your favorite package of taco seasoning to season the ground beef - or 2 Tablespoons of ground chili powder. I like to add just a bit of ground cumin and chopped cilantro to my ground beef, as well as a good sprinkle of cracked pepper. And I like to cook about 1/3 cup of chopped onions with the beef to give it additional flavor. - And now for the pepperocinis! Use as many as you wish in sliced form and add to the ground beef along with the onions and other seasonings as it cooks. When the ground beef is fully done, you are ready to assemble your Pepperocini Tacos.
