Cooking Tips for Apricots

When adding chopped dried apricots to your recipe be sure to soak in water so they will plump in the recipe. Otherwise they will be firm and hard to the bite.

You can also create delicious glazes with apricots. Simply cook fresh apricots on the stove top with a little water and mash when done. Add sugar substitute to sweeten or a little honey - or use brown sugar or white granulated sugar if you wish for a few more calories.

Canned versions are excellent for creating an apricot glaze. No need to cook; simply mash - leaving a little juice with the flesh. For a thicker glaze, add a little cornstarch that has been mixed with water based on label directions or you can mix all-purpose flour with water and use as a thickener.
