A Low Calorie Recipe Featuring Nutmeg & Pasta

The flavors in the mixed drink featured above are set-off by the addition of ground nutmeg which has a very unique taste. Whenever I think about nutmeg, I can't help but bring an image of egg nog to mind. When I purchase egg nog amid the holidays I have to buy two different mixes - one for the family members who like full-blown and one for those who are watching their weight. The reduced fat variety of egg nog contains less than half the calories of the regular.

For example, the brand I purchased recently contained 240 calories per 1/2 cup serving for the regular egg nog and only 100 calories per 1/2 cup serving for the reduced fat version. Even so - a 1/2 cup serving isn't very big so egg nog is loaded with caloric content as well as fat content regardless. Even so, it's good to know that we can save a few calories here and there because they really add up over time.

As with egg nog, pasta isn't considered one of the skinniest foods on the planet, particularly when dieting. However, pasta resides in the Grain Group and can fit into almost-any healthy weight loss plan. And we'll tie things together by adding that egg nog isn't the only tasty food that goes well with nutmeg as pasta does too!

Ingredients for this Lower Calorie Pasta & Nutmeg Recipe

The Filling Ingredients

1 package of pre-cooked lasagna
1 small container of reduced fat ricotta cheese
1 bar of reduced fat mozzarella cheese - or 8 ounces of shredded skim mozzarella cheese
Sea Salt & Cracked Black Pepper
1 slightly beaten egg
Frozen spinach that has been thawed and thoroughly dried via paper towels

If you wish - you can use your own special seasonings inside the cheese mixture. I prefer a rather bland lasagna, allowing the flavors of the cheese to rule. Mix all of the above ingredients; place a large spoon of the filling mixture inside a strip of lasagna and then roll. Place with seam down in a deep oven-proof dish. Top with the following sauce recipe.

The Topping OR Sauce Ingredients

Ground Nutmeg - 1/16th of a teaspoon (a tiny, tiny pinch)
1/4 cup of reduced fat margarine
1/4 cup of white all-purpose flour
1 1/2 cups of reduced fat or skim milk

Using low heat, melt the margarine. Add the flour and quickly stir to a smooth paste and quickly add the milk. Whisk until slightly thickened. Add nutmeg.

Cook in a preheated 350 degree oven until hot and bubbly. Serve with crusty bread and green beans. Opt for unsweetened tea to save beverage calories - and save room for a serving of fresh strawberries topped with light whipped cream.
