A Low Calorie Recipe Featuring Orange Juice & Chicken

Orange juice can increase the flavors in many foods without adding significant caloric content. When baking a cake, a pureed cup of orange sections with the skin and veins removed can replace the oil while rendering a very moist cake. Add a few grated pieces of orange peel and you'll add even more flavor to the cake. This is just one of a million or more ways that oranges and orange juice can assist in lowering calories in family favorite foods.

The low calorie recipe below features orange juice and chicken. You'll need a non-stick skillet. Begin by heating the oil and adding the onions. Allow to cook until onions are clear then add the chicken; salt and pepper.

Next, add a cup of orange juice to a deep bowl or cup and about 1 Tablespoon of cornstarch. Stir until the cornstarch looses and turns into a clear liquid as it mixes with the orange juice.

Add this mixture to the cooked chicken. Serve with a side of whole grain noodles, green beans and unsweetened tea.

Ingredients for this Low Calorie Orange Juice & Chicken Recipe

3 chicken tenders, raw - cut into bite sized pieces with skin and tendons removed
1 Tablespoon of extra virgin olive oil
1/2 cup of chopped raw onions of any variety - fresh or frozen
Sea Salt & Cracked Black Pepper
1 cup of Orange Juice & Cornstarch
1/2 cup of water

If you wish - you can leave the chicken tenders in their whole state and cook them on the stovetop using the onions for seasoning. If you like garlic or leeks - you can certainly use those for a seasoning base. After the chicken is thoroughly cooked, remove and set on a dinner plate. Prepare the sauce and pour on top of the chicken tenders.
