Drunken Lettuce Recipe

All varieties of lettuce are super low in caloric values; the common iceberg variety contains about 5 per chopped cup, thus making is an excellent choice while trying to lose pounds. It's generally considered a 'free food' as more energy will be burned consuming the one cup serving than it contains.

To prepare Drunken Lettuce, you can use any variety that you choose from the market shelf. Wash the leaves thoroughly; even if the packaging states that the vegetable has been pre-washed, it's still a good idea to give it another bath.

Place the washed and dried leaves into a pretty serving bowl.

In another bowl mix the following ingredients: 6 cherry tomatoes that have been cut in half, 3 finely sliced or shredded baby carrots, finely sliced celery with the strings removed, 1/4 cup of chopped cucumber - peeled, and 5 sliced black olives. Add 1 Tablespoon of reduced fat Catalina or Ranch dressing to the vegetables; mix and spoon onto the lettuce leaves.

To create a quick and easy wrap, add drained black beans or lean deli meat, then wrap. The beans work well for vegetarian style cooking.

Diet Glazed Carrot Recipe

For this recipe, use baby carrots as they tend to be sweet and they cook quite quickly. They are carved from full-sized carrots but because they have the peelings removed then tend to be sweeter.

Place into any type of oven or on the grill on a sheet of tin foil and allow them to cook until fork tender, turning when necessary. Sprinkle lightly with ground cinnamon, then drizzle with honey. Remove and enjoy.
