Meat Loaf, No Loaf Diet Recipe

Our tasty, low calorie recipe for meatloaf which can fit nicely into your weight loss plan.


Would you eat a virtually fat free steak on your diet plan? What about sirloin that contains minimal fat and only 170 calories per serving?

Most weight loss plans allow and encourage such. Meat equals protein equals muscles equals more calories necessary to support than fat equals protein satiety power equals weight loss.

What about a fast food cheeseburger? A homemade cheeseburger prepared with extra lean beef, real cheese, fresh vegetables, a whole grain bun and a kiss of mustard?

If you said 'no' to the fast food cheeseburger you'd be wise to answer such. Fast food burgers may be prepared with premium beef but that doesn't equal lean beef.

But when prepared at home with the ingredients referenced, then yes you can enjoy your healthy cheeseburger. Healthy? Sure it is - and botanically speaking it contains all the Food Groups if you count the tomato as part of its true group - the Fruit Group.

Ground Beef Nutrition Comparisons

Three ounces of extra ground beef that is 95% lean and 5% fat contains 116 calories and 4.25 grams of total dietary fat.

Three ounces of extra ground beef that is 90% and 10% fat contains 150 calories and 8.50 total fat grams. Three ounces of ground beef that is 85% lean and 15% fat contains 183 calories and 12.75 total fat grams. Three ounces of ground beef that is 80% lean and 20% fat contains 216 calories and 17 total fat grams.

And finally three ounces of ground beef that is 70% lean and 30% fat contains 279 calories and 25.20 total dietary fat grams.

So now we move to the subject which is the star of this low calorie, diet recipe - the humble meatloaf prepared with extra lean ground beef which makes it so low in caloric values and fat gram content.

There are endless possibilities concerning meatloaf recipes.

Even in families - each matriarch seems to have her special family recipe for meatloaf, as do the men chefs. Grandma's meatloaf may contain real bread crumbs and fresh herbs (make that 'secret' herbs) while Aunt Lena's contains commercially processed breadcrumbs, white pepper and a secret herbal sauce. Nonetheless, they're all good or they wouldn't be so locally famous. Our meatloaf is also really good and can fit into a healthy diet plan.


Our Meatloaf Recipe Ingredients

2 pounds of the leanest ground beef (hamburger meat) you can find
1 onion, sliced into rings
1 bell pepper sliced into rings (any color of your choice)
salt & pepper to taste
1/2 cup of bread crumbs (you can make your own from diet bread to save even more calories)
10 saltine crackers, crushed with your hands
2 eggs (or use egg substitute to cut cholesterol mg's)
1 cup of your favorite catsup
non stick spray
tin foil

How to Prepare Our Recipe

To prepare, mix all the ingredients except the catsup, onion and pepper.  Shape into a loaf and place in a dish that has been sprayed with non stick spray, or on a sheet of foil.  Coat the loaf with catsup then decorate with the onion and bell pepper rings.

Place into a 350 degree pre-heated oven and cook for about 45 minutes.  Serve hot or cold.  Meat Loaf No Loaf is delicious severed cold between two slices of bread.
