These little green trees are what I refer to as 'the broom of the gut' as they are wonderful about sweeping away toxins in the body while boosting health. And they are so low in caloric content. A one cup serving contains a tiny 30 calories.

Low Calorie Diet Recipe for Broccoli Cheese Diet Soup

The base of this recipe is what we need to work on in the area of calorie and fat content. Unfortunately, cheese is very generous when it comes to calories and fat grams. And it's generally very salty.

Recipe Ingredients

1 jar of Mexican queso, mild, medium or hot heat

low fat milk

1 cup of steamed broccoli, chopped

1/4 cup of chopped onion

1/4 cup of reduced fat sour cream

cooking spray

How to Prepare

To keep calories under control we'll use jarred queso - plain or Mexican both will work as well as any level of heat you prefer.

Let's thin the thick cheese mixture down to a consistency appropriate of soup using low fat milk. Place into a deep non-stick soup pot.


Next, add the cooked broccoli to the queso along with the chopped onion which have been cooked using the cooking spray.

Be sure to cook until the onions are translucent. They will help flavor the broccoli and add a bit of sweetness as it sometimes contains a strong flavor.

After the vegetables have been transferred to the cheese sauce, mix well and heat thoroughly. Stir in the sour cream.

Serving Suggestions

This diet recipe is designed so that the dieter can personalize the recipe.

Enjoy with crackers, a wedge of crusty bread or your favorite whole grain bread.

If you prefer, you can use Half & Half to thin the cheese rather than skim or regular milk. This will add a bit more body to the soup.

You can add as much broccoli to the recipe as desired as well as the cheese base and the onions.
