If you like bread and butter pickles - a marriage of sweet and slightly sour, then you may enjoy pickled beets. For a low calorie pickled beet recipe simply drain one small can of either sliced or whole beets.
Add 1/2 cup of white vinegar to the beet juice and heat. Remove and add Splenda to suit your personal taste. Add the beets to the liquid. When cool, store in a air-tight container in the fridge. Unless homemade pickled beets are processed with a pressure cooker they should be consumed within a couple of days after preparation. If you can get fresh beets, they tend to be sweeter and they may not have a distinct 'root' taste to them. Most fresh beets are so sweet and mild that they almost melt in your mouth.
Peel then slice as you prefer - thin slices or chunks. Boil in a bit of water until tender. Drain thoroughly and add a bit of fat reduced or light margarine. Salt as desired.
