Whether your diet weakness is sweet nothings, or proteins, or dairy products, or even chocolate - using popcorn and rice cakes can help you win your Weight Loss Battle!

Years ago, when rice cakes hit the market, I immediately ventured out to pick up a bag. Boy, was I excited. They looked so good on the commercials, too. However, after eating one and spewing rice particles out of my mouth like a snow blower for at least two minutes, my sweet vision of these cardboard tasting treats proved to be nothing more than an illusion. I thought I would receive the luscious taste of buttery rice, and perhaps even feel a bit oriental, but alas this was not the case. However, my chopsticks did work well as 'rice cake stabbers'.

Over the years, new varieties of these light cakes have made their way into the market. If you haven't experimented with rice or popcorn cakes in a while, try them again. The Orville Redenbacker's "Butter Popcorn Cakes" are especially great tasting - with or without toppings. Here are a few suggestions that will spice up your diet and save you boo-coos of calories. Sweet Nothing Lovers

Jammers

2 rice or popcorn cakes

2 Tablespoons of nonfat whipped topping

1 Tablespoon of your favorite jam, jelly or preserve

Simply top each cake with 1 teaspoon of jam, then 1 teaspoon of topping. Enjoy!

 

Fresh 'n Fruity Diet Ricecake Recipe

2 rice or popcorn cakes
2 Tablespoons of nonfat whipped topping
1/2 cup of your favorite fruit, chopped or sliced (peaches are especially great when you add a dash or two of cinnamon)
Nutrasweet or Sweet 'n Low to sweeten, if desired
Simply top each cake with 1/2 the fruit, then 1 teaspoon of topping. Enjoy!

 

Meat Eaters

Recipe for Deli-Licious!

2 rice or popcorn cakes
2 small slices of Mozzarella Cheese made with skimmed milk
One thin slice of lean deli meat, your choice
Dash of dried roasted peppers
Simply top each cake with 1 slice of cheese, then 1/2 the meat. Top with olive, if desired. Enjoy!

 Recipe for Peanut No Butter

2 rice or popcorn cakes
1 TEASPOON of smooth peanut butter, reduced fat if possible
1/3 small banana
2 Tablespoons of nonfat whipped topping
Nutrasweet or Sweet 'n Low to sweeten, if desired
Dash of nutmeg or cinnamon, if desired.

Mash banana and mix with sweetener and peanut butter until smooth. Spread onto cakes and add topping. Enjoy!

 

Moooooove Over

Cheese Please

2 rice or popcorn cakes
1 oz of your favorite cheese, made with skim milk if possible - grated
1 Tablespoon of pizza sauce
Pepperoni Slices, if desired
Sprinkle of roasted dried peppers

Spread sauce on cake, add cheese, pepperoni slice, and peppers. Heat in microwave until cheese is melted. Enjoy!

 

Diet Recipes for Chocoholics

Ricey Road

2 rice or popcorn cakes
2 Tablespoons of chocolate morsels (white or chocolate)
2 Large Marshmallows

Top cakes with morsels; add marshmallow. Heat in microwave until marshmallow 'puffs up'. Top with cherry if desired. Enjoy!
