Low Calorie Recipe for Chicken Alfredo

Luscious chicken, heavy cream, butter, more butter, more heavy cream - oh the heavenly rich sauce of Mr. Chicken Alfredo. But this guy is no angel. Above those tasty fettuccine noodles rests an ominous camouflaged glob. Don't trust this entree, and certainly don't eat it. Ignore those erotic waves of aromatic garlic that float past your flared nostrils.
Try this instead - a divine, light, enchanting plate of Chicken I'm Not Afraid-O,
a fantastic lower calorie recipe for Chicken Alfredo - that you
don't have to be afraid of while dieting. Healthier for your body and much kinder to your weight
scales, this Chicken Alfredo recipe hits the Diet Target.
The Recipe for Chicken
Alfredo, Diet Style
You will need the following
ingredients:
- 1 cup of boned
chicken breasts without the skin
-
1 can of low fat, evaporated milk
½ cup of fat free OR reduced fat Parmesan cheese
1 Tablespoon of the liquid no calorie butter spray*
- 1/2 cup of
sliced mushrooms
- 1/8 teaspoon of minced garlic
- salt and pepper to suit
personal taste
- 2 Tablespoons of cornstarch
1 small package of cooked fettuccine**
- non-stick cooking
spray
Saute mushrooms and
garlic using butter spray. Using low heat, add the butter spray, the evaporated milk and the
Parmesan cheese. Continue to heat while preparing thickening
mixture.
Thickening Mixture
- Place cornstarch into a small, deep bowl and add about a Tablespoon of cool tap water. The mixture will be very hard to stir when you begin, but suddenly it will 'free' up and liquefy. Add more water if you need to, but add sparingly.
At this point, the mixture in the saucepan should be nice and hot but not boiling. Add the diluted
cornstarch a bit at a time. The sauce will begin to thicken. If you like your sauce thin, add only a bit of the cornstarch mixture. If you like it thick, make more and add
- but do add this ingredient cautiously because the sauce will thicken as it heats and after it is removed from the heat, it will again thicken as it cools. Finally, add the salt, pepper and chicken, then pour over noodles.
This recipe also cooks up very nicely in the microwave without the fear of sticking.
This low calorie recipe for Chicken Alfredo serves 8 generously for about 200 calories per serving.

butter spray can be found in the dairy section. Butter Buds are also
a good low calorie alternative.
