The Pineapple Dance

Oh my, look at the exotic dancer doing the hoochey hula!  And rightly so, because she's got something sweet to dance about.  

Look at those hips, those thighs, those pretty eyes on our happy dancer!  Well...forget about the eyes. So just what has our dancer been eating lately to make her so happy?  Kumquats?  Nay!  Loquats?  Nay! Mangos? Nay!  Our happy dancer has been dining on the nectar of the Diet Guru's, pineapple! The joy of pineapples in her healthy diet is what all of the celebration is about!

And she'd like to share one of her favorite, popular recipes with you because every now and then, it's good to be reminded of familiar things.

Rock The Diet Pineapple Boat

1 fresh pineapple cut in two & scooped out
2 cups of fresh cubed unsweetened pineapple
2 sliced bananas
1 cup of fresh seeded cherries
1 cup of seeded purple grapes
3 cups of fresh strawberries
3 kiwi, sliced
1 box of sugarfree strawberry gelatin
1/2 container of fat free OR light whipped topping
4-5 packets of Splenda OR Equal

Incorporate ALL of the above ingredients, mixing in the topping LAST.  Mix in the topping VERY GENTLY and fill the two boats.

DO NOT PREPARE GELATIN ACCORDING TO PACKAGE DIRECTIONS!!  Simply mix the powder with 1/2 cup of HOT water until smooth.  Mix with the fruit to coat.

This entire recipe without the topping contains about 850 calories.  Because topping calories vary so widely, simply add up the calories of the topping you use, then divide the final calorie count by the number of servings.

Once you fill both boats, you'll have a good idea of the number of servings you'll be able to get just by giving it a good look.

This recipe is ultra healthy, ultra low in calories, and definitely worth doing a little dance for!
