Naturally Low in Calories in Fats

This is a fantastic low fat recipe for Chicken Tortilla soup - and it comes without high calories too. It's also fairly quick to prepare but it does contain a few more ingredients than many of the other low calorie recipes at Diet Bites.

Soup isn't a summer dish but this recipe is very filling and will absolutely scare away the 'hungries'. So, bring out your candles - and the CD with the classical guitar music- and settle in, relax and enjoy. It's fiesta time.

Use the tortilla chips sparingly as well as the cheese. Keep in mind that chips as well as cheese are mined with calories - the chips about 10 to 25 each depending upon the size of the tortilla chips, and the cheese at about 50 to 150 calories per serving, depending upon the type of cheese used.

If you opt for reduced fat cheese, you can either enjoy a bit more cheese or you can add up the caloric savings.

Mmm Mmm! Good old Chicken Tortilla soup without the high fat content and monster calories. Get your pencil handy so you can jot down this wonderful recipe. It's as simple to make as it is delicious.

Tortilla Soup for Dieters: The Recipe Ingredients

1 chicken breast, chopped with skin removed, uncooked plus one Tablespoon of extra virgin olive oil

1 large box or container of chicken broth, the reduced fat and reduced sodium variety

1 small can of Rotel-type tomatoes

Tortilla Chips + Shredded reduced fat Monterey Jack cheese or Gruyere

Chopped Cilantro - 1 bunch

Chopped Onions, about 1/2 cup

1 Tablespoon of Chili Powder, Cracked Pepper if desired

Juice of one fresh lime

How to Prepare This Recipe

Add the extra virgin olive oil to a deep non-stick pot and heat until hot but not sizzling hot - because you don't want to burn the chicken when added or to overcook the outside of the bird. Add the cubed chicken breast.

Be sure to remove any skin and visible fat. Also remove any bones or tendons.

Turn to coat the chicken breast evenly. Add the chopped onion as well as the cilantro. Stir, then add the chili powder and then the can of Rotel tomatoes. Be sure that the tomatoes are in bite-sized bits.

When the juices of the chicken breast run clear then add the chicken broth. Be sure to use the large box to ensure sufficient broth. Because the chicken broth is naturally salty - even the reduced sodium varieties, we won't be adding additional sodium (table salt) to this recipe.

You can however, add cracked pepper if you wish.

Once the chicken broth is hot and bubbly, add the fresh lime juice. You can use bottled lime juice if you don't have fresh on hand, but fresh just tastes best.

Serving Suggestions

Spoon a serving of the prepared soup into a pretty bowl and top with the cheese and a few tortilla chips.

You can also add a side of whole grain Mexican rice to the menu along with a glass of unsweetened tea or diet friendly soda.

As a note, Uncle Ben's makes a very tasty quick rice that takes only 90 seconds to prepare. Both the Fajita and the Mexican rice flavors go very well with our tortilla soup recipe.

This recipe also reheats well and may even taste better on the following day as the spices permeate the chicken as well as the broth. It makes a great winter soup - or as we mentioned, an any-time-of the year soup.
