Delicious Fortune Cookies for Your Diet

Low cal, low fat, lucky - it can't get any better than this!

Fing fong good! Stir fry some chicken and fresh veggies then enjoy your fortune cookies for dessert.

They go especially well with ripened strawberries and are lower in caloric values than many desserts.

You'll still get that sweet bite of flavor - yet it won't be overpowering to your weight loss plan.

Our Easy Fortune Cookie Recipe

Homemade fortune cookies are very easy to make. Basically, you bake the dough in tiny flat circles, then shape the cooked cookie while it is warm.  

The trick is to work swiftly. You will need to wear a pair of cotton gloves that fit snuggly over your hands while handling the hot cookies so that you won't burn your skin.

 You'll only have about 15 seconds or so to work with the cookie before the dough begins to harden - so work quickly.

Be sure and load each cookie with a fun fortune that you either create or glean from a book. Poetry or proverbs work exceptionally well.

You can even keep yourself motivated while dieting by stuffing your cookie with supportive fortunes such as, "Do 10 jumping jacks" or "Pause on your journey to enjoy a long bubble bath" which is a big favorite for guys while dieting....

Okay - joking aside, here is our boss recipe.

Fortune Cookie Recipe Ingredients

Fortune Cookie Recipe1 cup of white flour, sifted
2 Tablespoons of cornstarch

1/2 cup of sugar

6 packets of Equal or Splenda
1
/4 teaspoon of salt
1/4 cup of vegetable oil

1/2 cup of egg whites

1 Tablespoon of water

1 Tablespoon of vanilla extract or imitation vanilla

How to Prepare

Preheat oven to 300 degrees. Lay your printed fortunes that you have cut into tiny strips to one side.  

In a large bowl mix together flour, cornstarch, sugar, Equal/Splenda and salt.

Add the vegetable oil and egg whites; beat until smooth then slowly add water and vanilla extract or imitation vanilla - whichever product best suits your personal taste.

Drop smooth batter onto a backing sheet that has been sprayed with no stick/no calorie cooking spray.

Be sure to drop by level teaspoons onto the sheet and bake for 10 - 15 minutes (depending on heat-strength of oven) or until light golden brown. If your cookies are under baked then they will tear when you try to shape them.

Preparation Suggestions & Tips

It may be a good idea to practice with a couple of cookies at a time until you get the hang of 'the art of fortune cookie shaping'.  

The maximum number of cookies that you'll want to prepare at once will be four as they harden very quickly. Using a wide spatula you'll remove one cookie at a time from the hot oven.  

If the cookie hardens during shaping, return it to the oven for a few minutes. Fold as follows:

- Hold flat cookie using gloved hand.

- Place fortune in the center of the cookie.

- Fold sides up so that the cookie looks like a taco shell.

- Hold the ends of the cookie and bring it down gently over the edge of a bowl or pan so that the cookie is creased.  Until the cookies 'set' and fully harden, place then standing up in a muffin pan.

Store in an airtight container after cookies have completely cooled.  

Recipe makes a little over 2 dozen fortune cookies for about 50 calories each.

You may reduce the number of calories by shrinking the sugar to 1/4 cup and increasing the number of Equal/Splenda packets. Splenda will work best as Equal tends to lose it's sweetening powers when exposed to heat.
